Sugar cookies are my jam. I’m not kidding. These are the monkey wrench in my low carb diet. I see this recipe or even think about it and my little heart gets excited. To put it bluntly these sugar cookie bars are my love language.
Although there are a variety of cookies recipes out there and ways to make them.
I mean how can one resist the delicious symphony of flavors in a sugar cookie without the work of cutting them out or scooping them out. Topped with a creamy frosting that will make your taste buds break out in a collective cooleyhighharmony, for lack of a better word.
Why Sugar Cookie bars?
Simple. All the flavor, none of the work. Because let’s face it even scooping out cookies while waiting for them to bake can take FOREVER. That’s why this recipe is pure genius.
Now the ones pictured below are made from scratch. Which makes it even more delectable. That being all said, you can totally use any instant quick Sugar cookie mix and spread it out on a 9 x 13 baking pan and top with your favorite frosting. Most important don’t forget the sprinkles.

What you’ll need to make Sugar Cookie Bars:
- 2 1/2cupsflour
- 1/2tspbaking powder
- 1large egg
- 1/2tspsalt
- 1cupsugar
- 1/2cupunsalted butter(softened)
- 2TBSsour cream
- 1tspvanilla extract
For The Frosting:
- 1/2 cup of butter (1 stick)room temperature
- 8 oz of cream cheese (1 package) room temperature
- About 3 cups of powdered sugar sifted
- 1 teaspoon of vanilla extract
How to make Sugar cookie bars
Preheat your oven to 375 degrees.
In a bowl, combine your dry ingredients (flour, baking powder and salt) and set aside.
In a mixer cream together butter and sugar for about 3 minutes until light and fluffy.
Add in egg, sour cream and vanilla and mix until combined.
Slowly add in your flour mixture while stirring until everything is combined.
Press the batter into a greased 9×13 baking dish and spread it out evenly with your hands or a rubber spatula.
Bake for 20 minutes or until edges just barely start to turn golden.
Cool completely
Then Make Frosting for Sugar Cookie Bars:
Mix together all your frosting ingredients until creamy.
What’s great about this recipe it’s very versatile for any holiday. ie: patriotic sprinkles for 4th of July, Pink frosting for Valentine’s day, red and green for a Christmas treat.
Add in desired amount of food coloring (if choosing to color)
Spread frosting evenly over cooled cookie bars. Add sprinkles
Cut into squares and serve.
