Traeger Smoked Spatchco*ck Turkey Recipe

I don’t consider myself an “expert” in many things. Partof that is just that I’m also a perfectionist, and to me being an “expert” means that you know all there is to know about that subject, and how can we ever, right?

I feel like an expert after I made this turkey.

Turkey dinner is my FAVORITE dinner, you guys. I’ve posted about this many times before, but let me remind you. We’ve done a traditional Traeger Grilled Turkey already too that you’ll love. I’m SUPER particular about turkey because I love it so much. We had a traditional turkey dinner for our wedding meal – in August.

My whole family pitched in to cook it, and it was one of the most fabulous meals I’ve ever had.

I don’t think my family wanted to make turkey again until I’d been married for 5 years or so, but they still love me so hopefully they recovered. 😀

I was always skeptical about the Spatchco*ck method because normal turkey roasting is SO good. Plus, the stuffing. I can’t miss out on the stuffing. But I was really interested in the additional juiciness in the turkey that all of the spatchco*ck fans shout from the rooftops.

They were right.

How to spatchco*ck a turkey

The process of spatchco*cking isn’t super difficult, but it can be a little rough without the right tools. Namely, a killer pair of kitchen scissors. You’re going to be cutting through the rib cage on either side of the bird, along the sides of the backbone which is the piece you need to remove.

Step-by-step Instructions to Spatchco*ck a Turkey

  1. Place the bird on a stable surface, with the breasts down and the legs towards you. You should be able to see and feel the backbone of the bird on top.
  2. With SHARP kitchen shears, start cutting up the side of the backbone, cutting through the ribs. This takes some muscle, and if you are squeamish about bone breaking noises you might want to tag in someone else because this gets a little intense.
  3. Cut up the other side of the backbone, through the ribs, and remove the backbone. Save it for the stock pot though!
  4. Flip the turkey over and lay it flat. Using the heel of your hand, press down on the breastbone, hard, to flatten it out more.
  5. That’s it! You are ready to season and grill!

How to season a spatchco*ck turkey

Just because your bird is now face down, don’t neglect to season the underside! Brush the whole bird with oil or melted butter, and then go nuts with the herbs and seasoning.

For the turkey pictured here, I used a heavy hand with Traeger Chicken Rub, onion powder, garlic powder, salt, and sage. You can use whatever seasoning mix/combination is your favorite. There are a lot of great combinations out there.

My advice is just to NOT SKIMP. You are seasoning a LOT of meat. It needs lots of flavor.

What can you do with leftover turkey?

Our favorites are the simple turkey sandwich on leftover rolls with a little salt and mayo, but if you are on day 2-3 of your turkey leftovers and want to get a little fancy, my Homemade Turkey Noodle Soup might just rival the main event of Thanksgiving dinner. Plus, you can use up not only the leftover turkey meat, but also use the carcass for the broth, and the gravy in the soup as well!

Ingredients

  • 1 whole turkey
  • 1/2 cup of oil or melted butter
  • 1/4 cup Traeger Chicken Rub
  • 1 teaspoon onion powder

Instructions

FAQs

Should I Spatchco*ck a turkey for Thanksgiving? ›

Spatchco*cking ensures even cooking and browning since the entirety of the skin and meat are exposed to even heat. Plus, with that shorter cooking time, you are especially guaranteed to have juicy, perfectly cooked turkey meat. Another perk of this method is easier carving.

How long to smoke a spatchco*ck turkey at 225 on a pellet grill? ›

Set the Traeger to 225°F and preheat with the lid closed for 15 minutes. Set the wire rack over a 4-inch-deep roasting dish and set the turkey on top, breast side-up. Close the lid and smoke the turkey until the thickest part of the breast reaches an internal temperature of 100°F to 110°F, about 2 to 2.5 hours.

Is smoked turkey good for Thanksgiving? ›

This may seem obvious, but the turkey is a big bird. That means that when it's smoked, there's plenty of surface area to be infused with smoky flavor. That smoke, paired with the lemon zest and herbs of our Crazy Chick Lemon Garlic, will have your guests coming back for seconds, thirds and fourths.

Is it better to smoke a turkey whole or Spatchco*ck? ›

Spatchco*cking is a great choice for a big bird, because it helps it smoke faster and makes it easier for you to get really juicy results.

What is the downside of spatchco*ck? ›

But it can also be problematic. It takes up space in the oven, for one thing. Doesn't that bird know you have green bean casserole, sweet potatoes, and rolls waiting in line? Plus it is often overcooked, and half the skin—which we want ultra crisp—is soaked and squidgy at the bottom of the bird.

Should you brine a turkey before spatchco*cking? ›

If you decide to spatchco*ck your bird (which I highly recommend), you can brine it either before or after you spatchco*ck.
  1. If I want to wet brine the turkey, I will spatchco*ck after brining.
  2. On the other hand, if I plan to dry brine, I will spatchco*ck the turkey before putting the dry rub on the bird.

Is it better to smoke a turkey at 225 or 250? ›

When smoking at 225°F, it can take about 30 to 45 minutes to cook one pound of turkey. That means a 12-pound turkey should take at least six hours to cook in a smoker. To smoke your turkey faster, increase the smoker's temperature to 250°F to 275°F.

How long does it take to grill a 20 lb Spatchco*ck turkey? ›

After 1 hour and 20 minutes of total cooking time from when the breast was placed on the grill, the turkey should be close to finishing. It is done when it registers 165°F in the thickest part of the leg (not touching bone) and in the thickest part of the breast (not touching bone).

How much quicker does a spatchco*ck turkey cook? ›

A spatchco*cked whole turkey will cook more quickly than a standard turkey. While the spatchco*ck turkey cooking time will depend on the size and oven temperature, 6 minutes per pound is a good rule of thumb. Depending on the size of the turkey, cook times are estimated between 60-90 minutes.

What not to do when smoking a turkey? ›

Turkeys should be brined overnight, coated with fat only initially, and minimally seasoned. Brining keeps the turkey from drying out during the smoking process. Basting the turkey only results in soggy skin. Overly seasoning the skin just makes inedible skin – let the brine and aromatics add flavor.

Why not stuff a smoked turkey? ›

You Could Overstuff the Turkey

It will, however, make it even harder to get the stuffing to cook evenly, meaning you're even more likely to get a scorched bird—or wind up with salmonella-susceptible pockets of undercooked stuffing.

Should I put butter under the skin of my smoked turkey? ›

Butter makes your turkey better

You may not need to double brine, but you can still maximize the moisture of the meat with a butter layer. Stuffing salted butter between the skin and meat will help baste and season the meat as it cooks.

How long to smoke a 15 lb spatchco*ck turkey at 225? ›

Smoke the turkey over low heat 225° - 275° F for approximately 11-13 minutes a pound. 9. Once the breast reaches 165°F, remove, cover loosely with foil, and allow to rest approximately 30 minutes.

Does spatchco*ck turkey taste different? ›

A roasted spatchco*cked turkey is crispier, juicier, and quicker than a conventional whole bird, but you can cook a butterflied bird in plenty of other ways. If you want a different taste, you can smoke your spatchco*cked turkey.

What is the best flavor to smoke a turkey? ›

For smoking turkey all year long, try hickory, pecan, and apple smoking wood. Our favorite wood chips and wood chunks are by Western Wood because they are kiln-dried and burn clean. Our favorite pellets for smoking turkey are B&B Pecan pellets or Jack Daniel's Pellets.

Can I spatchco*ck a turkey the night before? ›

Spatchco*ck Ahead Of Time

To save yourself some roasting time, you can spatchco*ck your turkey the day before. Just set it onto a baking sheet and leave it in the fridge uncovered overnight. Rub it with a little salt for a dry brine and allow the cold air to dry up the skin. This results in the ultimate crispy skin.

How do you spatchco*ck a Butterball turkey? ›

How does spatchco*cking affect cooking time? ›

I love to cook poultry this way because of all the wins that are involved: you halve the cooking time but still get to keep the meat on the bone, meaning it retains all that delicious flavour.
