What is Green Seasoning Marinade?

Green Seasoning Marinade is a flavorful marinade made up of green onion, ginger, garlic and herbs (leek, celery, basil, parsley etc). It’s the base to a lot of African dishes and by preparing it in advance; you can significantly reduce the preparation time for many recipes.

What Goes in Green Seasoning Marinade?

  • Celery(both stalk and leaves)
  • Parsley
  • Leek/Green onions
  • Basil
  • Garlic
  • Ginger
  • Cooking oil (or water)

How to Make Green Seasoning

  1. Clean and roughly chop all the ingredients.
  2. Add in a blender/food processor and add cooking oil. (If using water instead of oil, add just enough to facilitate easy blending).
  3. Blend into your prefered consistency. (Blend in batches to avoid overworking your food processor)

How to Store Green Marinade

After blending, immediately transfer this marinade in an air-tight container and keep in the fridge for 1 to 2 weeks. If blending with water, keep in the fridge for upto 1 week.

It will last for up to six months in the freezer.

In the past, I used to freeze this Green seasoning Marinade in freezer bags.The problem with freezing this way is that it’s hard to break off a frozen chunk of marinade and it’s also hard to “eyeball” how much you are going to need for a recipe.

Now, I use ice cube trays to portion them and once frozen, I easily pop them out and store in freezer bags in the freezer. That way, I can easily take the right amount I need when ready to cook.

How to Use this Marinade in Recipes

You can use this Marinade in SO many ways! Use this seasoning in any recipe calling for onion, garlic, ginger and herbs! In short, use it to give extra flavour to pretty much anything savory you make. For example:

  • When making stir-fries
  • Use it when making stews
  • For making Soups
  • To marinate all your Beef, Fish, Chicken and Pork.
  • As a base for Spicy Green Dipping Sauce
